Silver Bison, a Bison Ranch located off I-90 in Western Wisconsin. It was worth the detour to pick up some bison burger. I had never had it before, but always wanted to try it. Once home I used one of my venison recipes to cook up some bison burgers on the grill. As I took the first bite, the only thing going through my mind was “man, I gotta put one of these in the freezer!” And so began my quest for an American Bison hunt.

I selected the Black Hills of South Dakota as my destination. And 2 months and 1,200 miles later I was hunting. After several failed stalks, we located a small herd about 150 yards out in a flat between two draws. The herd was on the move, but the second to the last one caught my eye. It wasn’t the biggest in the group, but it’s golden cape shone brightly with splendor in the late morning sun. As I felt the jolt from the Browning .338 Ultra Mag, I saw the bison lurch and heard the bullet strike home. In seconds, the herd had vanished in thundering hooves. When the dust cleared, the bison was on the ground. The 225 grain Federal Accubond had done it’s job, with one clean shot to the heart.

The rest is history. We now had over 400 lbs of high-protein, low-cholesterol bison meat in our freezer. Not a bad way to start winter.
