Bluegill is one of the best tasting freshwater fish. With it’s mild flavor, it makes for the perfect foundation for this outstanding recipe. I added shrimp to make it more of a rounded seafood dish, but it can do just fine with only bluegill (or any other fish). Start by heating olive oil, butter and scampi seasoning in a frying pan. Then cook the fish and shrimp on medium heat. Make the pasta and alfredo sauce separately. After draining the alfredo pasta noodles, place on a plate (or in a bowl), gently lay the bluegill filets (and shrimp) on the bed of pasta. Then pour the creamy white garlic sauce over the top. Serve with a side of garlic bread, and watch it disappear!
Ingredients:
– 8-10 fresh bluegill filets (and fresh shrimp)
– alfredo pasta
– half cup of butter
– 2 cups heavy cream
– 4 ounces cream cheese
– Tablespoon minced garlic
– teaspoon garlic powder
– teaspoon Italian Seasoning
– half cup Parmesan cheese
– 2 Tablespoons Scampi Seasoning
– half cup of Olive Oil
– quarter stick of butter
– Garlic Bread
WHITE GARLIC ALFREDO SAUCE
– Heat heavy cream, butter, and cream cheese in sauce pan until ingredients are melted
– Add minced garlic, garlic powder and Italian seasonings
– Heat until slight boil, add parmesan cheese and reduce heat and let thicken

FISH AND SHRIMP
– Heat half cup of olive oil and quarter stick butter in frying pan
– Add Scampi Seasonings and bring to simmer
– Pat bluegill filets dry, place filets in pan and cook for about 3-4 minutes per side
– If adding shrimp to the recipe, remove the bluegill and cook the shrimp in the same pan
SERVE

– place the bluegill filets (and shrimp) on the bed of noodles
– pour the white cream sauce over the top
– serve with a side of garlic bread
