This easy-to-make appetizer will MELT IN YOUR MOUTH! It’s marinated deer loin, wrapped around a chunk of cheese, then wrapped again with bacon.

The combination of a chipotle marinade and pepper jack cheese create a tantalizing zesty flavor, without the spicy kick. The lime in the marinade actually begins to “cook” the meat, so do NOT marinate for too long, half hour is plenty. The meat fiber is also broken down by the lime so it’s tender. As with all of my venison recipes, it’s best cooked medium-rare (do not overcook or it gets tough and dry). I guarantee, this one will go over big at your next party.

Ingredients:

  • 1 Pound venison loin
  • Half Pound pepper jack cheese (block)
  • 1 Pound sliced bacon
  • Half Cup Lawry’s Baja Chipotle Marinade
  • Toothpicks

Cooking instructions:

  1. Prepare venison loin by removing all of the silver skin and tallow
  2. Slice loin into medallions (about 1/4″ thick)
  3. Marinate loin medallions in Lawry’s Baja Chipotle Marinade for a HALF HOUR (in a ziploc bag)
  4. Remove loin medallions from the bag, and gently pound them with a meat mallet, until they are thin
  5. Cut the pepper jack cheese into small chunks
  6. Wrap the tenderized loin around a chunk of pepperjack cheese
  7. Then wrap a slice of bacon around that, and secure with 2 toothpicks
  8. Grill on medium heat until medium rare, then serve
